I got this recipe from my Mom but altered it a bit. It still needs some tweaking but made for a pretty good start.
Potato Pepperoni Supper
5 large potatoes, cut into 1/8" slices (may try dicing it next time) - this makes a ton, maybe fewer potatoes?
1 Onion diced
salt & pepper
1 to 2 cups shredded mozzarella (maybe try mixing in some pepper jack cheese for a kick)
8 oz tomato sauce (maybe half tomato sauce, half tomato paste for some thickness)
3 oz pepperoni, sliced ( we used turkey pepperoni)
salt and pepper
Spray large skillet with non-stick spray or coat with some oil. Arrange potatoes and onion on bottom and slightly up side of skillet;
sprinkle with salt and pepper.
Cover skillet; over medium-low flame,
cook until potatoes are tender, about 20 - 25 minutes.'
Top with 1/2 can tomato sauce; arrange pepperoni and tomatoes over sauce.
Top with cheese and remaining sauce.
Cover skillet; cook until cheese is melted and tomatoes are heated through. Makes 6 large servings.
I served it with B's favorite broccoli.
